Cottage Cheese with Tomato and Arugula

Serving Size: ½ cup cottage cheese with ½ cup veggies
Calories: ~180

Ingredients:
• ½ cup cottage cheese
• 4–5 slices of fresh tomato
• ½ cup fresh arugula
• Optional: a few slices of cucumber
• Optional: thinly sliced red onion, drizzle of olive oil
• Salt and pepper to taste

Directions:
• Spoon cottage cheese into a bowl.
• Top with fresh tomato slices and arugula.
• Add cucumber and red onion if desired.
• Sprinkle with salt and pepper to taste.
• Enjoy immediately.
